Tasty one pot Italian pasta packed with flavour will help you fight colds
If you are looking for a filling yet simple meal, this one pot pasta dish is easy to prepare and packed with nutriticous, delicious ingredients.
If you are looking to change up your midweek meals, this viral pasta dish could be for you. The vegan-friendly puttanesca works well for the whole family, plus won’t require a lot of washing up post preparation.
The recipe, created by viral chef and food writer Christina Soteriou, was shared on Mob Kitchen and has been described as an “ultimate ease for a simple midweek dinner that tastes incredible.”
Christina said: “If you love a very lazy, all in one pot meal, that also has fibre and protein in it, then try my take on this puttanesca pasta. We’ve got a garlicky tomato-y sauce and tasty cupboard-y things like artichokes, olives, chicpeas and capers.”
She added: “I add the balsamic vinegar for extra falvour and the starch from the pasta.”
Christina begins by adding some olive oil into a frying pan, before adding in some chopped onion slices and a pinch of salt. Once the onions start to brown, add in a spoonful of tomato paste, a spoonful of ginger as well as some chilli flakes.
Mix everything together before adding in a tin of chopped tomatoes. Keep stirring the pot until the tomatoes are hot, then add in some kalamata olives, a vegetable stock cube, a handful of capers, and some balsamic vinegar.
Then add in some spaghetti and chopped artichoke, and a cup of water. Boil, and add in a tin of chickpeas. Put a lid on top of your pan and leave until your ingredients soften.
Once ready, add some chilli oil and seasame seeds to finish. Then serve and enjoy.

But there were many that disagreed with the pasta being cooked in the same pot. One individual said: “Just use another pot for pasta and use the last 3/4 minutes of the pasta timer to move the pasta in the main pan to finish the pasta so you get the same thing but not overcooked though I get that it’s easier in one big thing but please don’t.”
“Cook the pasta last with salt water and then mix it in the pan when there’s a minute or two left before the pasta is al dente,” suggested another.
“I’d rather spend 10 seconds rinsing a pot I used to boil and cook pasta properly,” another added. You can make the pasta on the side or make it in one pot if you want to avoid extra washing up or hassle.
