Easy and healthy vegetable soup recipe your ‘gut will love’
Many people are suffering from coughs and colds and generally feeling unwell at the moment.
In fact, it was announced todau (December 12) that a surge in flu cases has seen a 70% increase in hospital bed occupancy across England, according to the NHS.
This means, a lot of people are seeking ways to boost their health and immunity right now. Among popular choices are natural remedies, teas, and an increased intake of fruits and vegetables.
Soup, with its warming properties and high vegetable content, is often a go-to for those feeling under the weather too. And registered nutritionist Emily Solma recently shared her ‘get well soon’ soup recipe on Instagram, where it quickly gained popularity.
The vegetable soup recipe, which includes red bell pepper, carrots, onions, and butter beans, was liked by over 53,000 of her followers. A reel saw Emily bake the dish was in an oven for 35 minutes, after which hummus and balsamic vinegar were added. The mixture was then blended with vegetable stock and water before being served.

In her caption for the soup, which is packed full of vitamins and ‘good for your , she wrote: “Pov: you’re feeling run down so you make my ‘get well soon’ soup. My boyfriend was super unwell last week so I made this 3 times! It’s comforting, nutrient-packed and perfect with some chunky slices of buttery bread.”
She continued: “Packed with immune-boosting ingredients, this quick and easy roasted veg soup is the perfect pick-me-up when you’re feeling under the weather! It’s high in vitamin C and A, rich in antioxidants and your gut will LOVE it. Make sure you hit the save button to recreate it yourself!”
Emily also offered some additional tips for those planning to make the soup, saying: “Make sure you squeeze out the garlic after cooking, you do not want to blend up the skin.” She also noted: “I don’t have a big blender so I used my nutribullet and blended in batches.”
For those who prefer a thinner consistency, Emily suggested adding more water, while less water would result in a thicker soup.
Many followers expressed their excitement to try the recipe, with one commenting: “I’m going to make this tomorrow.” Another added: “Omg YUM, I need to try this soon.”
